This is ideal for a midweek meal with lots of flavour giving a delicious gravy. Roast on high for 20 minutes then reduce to a moderate oven approx. 180’C / Gas 4-5 for 20 minutes per lb (450g).

Check readiness by piercing meat in the fattest part and squeezing out the juices. When fully cooked the juices will run clear.
