Hints and Tips
Roast on high for 20 minutes then reduce to a moderate oven approx. 180’C / Gas 4-5 for 20 minutes per lb (450g).
Check readiness by piercing meat in the fattest part and squeezing out the juices. When fully cooked the juices will run clear.
For best results baste frequently with the meat juices, and for extra tasty gravy, rest the meat on a bed of seasonal root vegetables.
