Lemon Pepper Marinated Pork Steaks with Brie & Roasted Vegetables

Delicious take on this Italian classic

4 Pork Steaks
1 Lemon, zested and juiced
120g Brie or Camembert
Olive Oil
Balsamic Vinegar
Black pepper, freshly ground
1 Large Red Pepper, seeds removed and cut into 4
1 Large Green Pepper, seeds removed and cut into 4
1 Aubergine, cut into 1cm thick slices
300g Salad Potatoes, skin on and halved


Lightly score each side of the steak in a diamond like pattern.  Rub in a little olive oil, lemon juice, lemon zest and black pepper.  Leave for 1 to 6 hours to matinate.

Place all of the prepared vegetables into a roasting dish and drizzle with olive oil. Place in the oven at 190 C for approximately 40 minutes, check and shake every so often.

Grill, shallow fry or barbecue for 3 – 4 minutes per side on a medium heat (or until tender).

Place a couple of slices of rich creamy brie, enough to cover, then place under the grill for 2 minutes.

Enjoy with the roasted vegetables drizzled with balsamic and olive oil.
